
What is honey?
Honey is a natural food made by bees from flower nectar. Bees collect nectar, add enzymes, reduce the moisture content and store it in honeycombs. The result is a sweet, concentrated product that has been valued as food for thousands of years.
Pure honey contains nectar, natural enzymes and pollen. It does not need added sugar, syrup or heavy industrial processing to become honey.
How is honey made?
The process starts when bees collect nectar from flowers. The nectar is stored in the bee's honey stomach and already begins to change during the flight back to the hive.
Inside the hive, bees pass the nectar to one another and continue adding enzymes. The nectar is then stored in honeycomb cells. By fanning their wings, bees evaporate excess moisture until the nectar becomes honey. When the honey is mature, the bees seal the comb with a thin layer of wax.
What makes honey pure?
Pure honey is honey that:
- has not been heated unnecessarily
- has not been filtered until all natural character is removed
- contains no added sugars or syrups
Industrial honey is often heated to keep it liquid and make it easier to process. That can change its flavour, texture and natural character. Pure honey stays closer to the way bees made it.
Raw honey vs processed honey
Raw honey is usually only strained after harvest to remove larger wax particles. It is not heated and keeps more of its natural texture, flavour and origin character.
Processed honey is often heated, heavily filtered or blended from multiple origins. This creates a more uniform product, but it can also make the honey less distinctive.
Why does honey crystallize?
Crystallization is a natural process and often a positive sign. The natural sugars in honey form crystals over time, making the honey thicker or more solid.
Crystallized honey is not spoiled. In many cases, it shows that the honey has remained minimally processed.
