
What is raw honey?
Raw honey is honey that is handled as little as possible after harvest. It is usually strained to remove larger wax particles, but it is not heated or heavily filtered. This keeps the honey close to the way bees made it: pure, natural and full of flavour.

How is raw honey made?
The process begins when bees collect nectar from flowers. Enzymes help transform the nectar while it is carried and stored in the hive. The bees then fan away excess moisture until the nectar becomes mature honey.
When the honey is ready, the honeycomb is sealed with wax. For raw honey, the honey is then carefully harvested and strained without intense filtering or heat treatment.

Crystallization is a sign of pure honey
Many people worry when honey becomes thicker or more solid over time. This process is called crystallization, and it is completely natural.
Crystallization often shows that honey has not been overprocessed. Raw honey can crystallize faster because it has not been heated or filtered until all natural particles are removed.
Tip: Prefer softer honey? Place the closed jar in lukewarm water, never boiling water, and let it slowly soften.
