Why does honey crystallize?

Crystallization is a natural process where honey becomes thicker or more solid over time. It happens because the natural sugars in honey form small crystals. This is especially common in pure and minimally processed honey.

Many people think crystallized honey is old or spoiled, but the opposite is often true. Crystallization can be a sign that the honey has not been heavily processed.


What happens during crystallization?

Honey is made mostly of natural sugars such as glucose and fructose. Glucose crystallizes more easily than fructose. When the balance of sugars and the storage temperature are right, small crystals begin to form.

Because raw honey keeps more of its natural structure, crystallization is normal and expected.


Does all honey crystallize?

Not every honey crystallizes at the same speed. It depends on:

  • the flower source
  • the balance of glucose and fructose
  • storage temperature
  • how much the honey has been processed

Honey with more glucose tends to crystallize faster. One honey can become firm after a few weeks, while another can stay liquid for months.


Why does supermarket honey often stay liquid?

Many supermarket honeys are heated and heavily filtered. Heating dissolves existing crystals and changes the structure, helping the honey stay liquid for longer.

That makes honey easier to process at scale, but it can also reduce its natural flavour and character.


Crystallization can be a quality signal

In pure and raw honey, crystallization is usually a positive sign. It can show that:

  • the honey was not overheated
  • the natural structure is still present
  • no unnecessary additives were used

Many honey lovers even prefer crystallized honey because it spreads easily and can develop a creamy texture.


How can you make honey liquid again?

If you prefer liquid honey, you can soften it gently:

  1. Place the closed jar in lukewarm water
  2. Keep the water warm, not hot, around 40°C or lower
  3. Let the honey warm slowly
  4. Stir gently if needed

Avoid boiling water or microwaves, because high temperatures can change the flavour and texture.
